True comfort food, soup is perfect winter or summer, lunch or dinner. In the winter try using dried thyme, or buy fresh thyme from your local supermarket or greengrocer.

CARROT AND THYME SOUP

With vitamin C from the carrots and thyme’s medicinal gifts, this soup is a delicious way to ward off winter colds.

8 ounces carrots, grated

4 shallots, chopped fine

8 sprigs garden thyme, or 2 teaspoons dried thyme

1 garlic clove, chopped fine

1 tablespoon lemon juice

3 pints chicken or vegetable stock

Salt and pepper to taste

1. Simmer all the ingredients in a covered saucepan for 30 minutes.

2. Remove the thyme sprigs (leave the leaves that have come off) and discard. Serve with salad and crusty bread.
